Some Biltong Making info

With time I'll provide more in-depth info.
Below is some information my dad sent us from South Africa.
Make your own Biltong Maker
Take a largish carton box and place a false bottom of carton about 15 cm from the bottom with a dozen ventilation holes.
Fix 2 light bulbs underneath this.
Fix a couple of steel or wood rods close to the top for hanging the Biltong.
Make some ventilation holes in the lid and close.
Switch on the light bulbs. The heat will rise to the top causing dry air to escape.
Within a few days you have your Biltong!
Biltong Recipe
Mix brown grape vinegar - 1 bottle with Worcestershire sauce-one third cup
Get 1-kg Biltong spices from your butcher
Add extra black pepper, a cup of brown sugar and colander to taste
Cut a nice piece of topside in biltong
Sprinkle first the wet & then the dry ingredients over the meat. (Not the whole lot domkop!)
Turn everything every four hours overnight.
Hang up & dry Invite your pals to bring a sharp knipmes & enjoy.
Alternative Biltong Recipe and Spices
For 6-8 pound meat:
Salt
0.5 pound sugar
1 oz salpetre
Rub a little salt in & let rest for an hour
Then rub in mixture of 0.5 pound salt,0.5 pound sugar, & spices (see below) to taste
Leave biltong for 2-3 days in mixture & turn 2-3x a day
Spices:
peppercorn
cloves
nutmeg
allspice or pimento
mace (Mace is the delicate red skin around the shell of a nutmeg which is ground for use as a spice.
)
Biltong sauce for Pasta
2 Koppies fyn gerasperde droe Biltong
1 Fyngekapte ui
4 Toontjies Knoffel
1 Handvol gekapte koriander (coriander or dhana)
1 wynglas olyfolie
1 suurlemoen se sap
sout & swart peper
